Description

From a recipe that originated 100 years ago and has remained the same over time, Soppressata is one of the first cured meats consumed by farmers.
It consists of boiled pork parts, cut by hand and kneaded with the addition of salt, spices, local flavors and aromas.
It is stuffed while still hot into special cloth cloth or natural gut and then left to cool.
A purely winter product, eaten with bread or in salads, with the addition of oil, juice and orange and lemon pulp.
